Description
From three vineyards, all cool sites in Marlborough. Hand-picked, and predominantly destemmed before going to small vats for cold soaking before ferment. 30% fermented with stems or whole bunch, 100% indigenous yeasts. Hand plunged three times a day. When finished the wine was taken straight to French barriques where it sat for 10 months. Fined with organic egg white and bottled with minimum effective sulphur.
